Fitzsimons led the transformation of the iconic Scores Hotel in St Andrews into the five-star boutique destination now known as Seaton House. Steeped in history, the hotel’s original name was reinstated as a meaningful tribute to the building’s heritage and architectural legacy. The comprehensive refurbishment encompassed every level of the property, including the reconfiguration of the ground and lower ground floors to accommodate Bow Butts, an atmospheric whisky lounge, and Ondine Oyster & Grill — a refined seafood and oyster bar helmed by award-winning chef Roy Brett.
